Roasted roots


I know, fennel isn’t a root, but it’s still yummy!  Was going to roast a chicken, and needed some veggies, so i went out to the garden.  The fennel really took off after the weather cooled a bit, and i cleared out some other veggies, giving it more light.  This variety is called “Perfection”, and after roasting it with olive oil, salt and pepper, it was pretty close.

I also roasted some carrots, and was amazed at the huge purple one i pulled out of the ground: was nearly the size of the fennel!  All the neighboring carrots were normal sized, but this guy was on steroids or something.  I wonder what the difference was?
